FIR honey from Greece is one of the rarest and most distinct honeys in the world. While the most famous "Vanilla" Fir honey originates from the Peloponnese (Mount Mainalo), the fir honey produced in the Aegean region—particularly on islands like Evia, Thassos, and Ikaria—possesses a unique "maritime forest" character.
Unlike flower honeys, fir honey is a honeydew honey. It is produced by bees collecting the secretions of microorganisms that live on the Greek Fir (Abies cephalonica) rather than nectar from blossoms.
1. Distinctive Sensory Profile
Fir honey from the Aegean is prized for its high density and complex flavor profile that differs from the floral sweetness of mainland varieties.
- Texture: It is exceptionally thick and viscous, often described as having a "velvety" or "resinous" mouthfeel.
